Pectolyase Y-23 is a highly purified maceration enzyme from Aspergillus japonicus. It contains two types of pectinase such as endopolygalacturonase and endo-pectin lyase in high activity. Included is a maceration stimulating factor which stimulates tissue maceration by both pectinases.
